There are two distinct characteristics of the Japanese cuisine which are umami and mouthfeel. These two aspects of the general taste experience of Japanese food will be explained and exemplified by dashi and tsukemono.

The lecture will be given by Prof. dr. scient. Ole G. Mouritsen (Syddansk Universitet), Japanese Cuisine Goodwill Ambassador.

Anniversary Concert for 150 Years of Japan-Denmark Diplomatic Relations: The Harmonious Sound of Koto

The anniversary concert “The Harmonious Sound of Koto” is a concert of traditional Japanese music featuring some of the most prestigious performers from the Tokyo University of the Arts (TUA) to commemorate the 150th anniversary of the establishment of the diplomatic relations between Japan and Denmark. The “koto” is a traditional Japanese stringed musical instrument, and the primary koto player, Mr. Shoin Hagioka, succeeded to the title and established mastership as Shoin Hagioka IV in 1980. This is the first time for TUA, which is the only national university (of the arts) in Japan that offers traditional Japanese music programs, to perform in Denmark. We hope that you will enjoy “The Harmonious Sound of Koto” in ensemble with other traditional Japanese instruments –the shamisen, shakuhachi and tsuzumi.
